Alfalfa

What Is Alfalfa? Alfalfa (Medicago sativa), is a perennial flowering plant belonging to the legume family, though it is usually considered an herb. Alfalfa is cultivated in many countries around the world but is said to have originated in south-central Asia. Alfalfa's name is rooted in Arabic, meaning "father of all foods". Indeed, alfalfa packs quite a nutritional wallop, containing over 300 nutrients and phytonutrients, including beta carotene, vitamins A, B1, B2, B5, B6, C, E, and K.
